unfortunatly I have to work the morning of, and from 8am to 10pm the night before. I’m planning on making it on Monday or Tuesday instead.
If I boil, then bread and fry the eggplant and layer it all ahead of time, is it necessary to bake it that day, or can i store it in the fridge unbaked and just do that last step on thanksgiving day?
I want to avoid the dish getting to mushy, if possible.

I like to par boil the eggplant before i fry it, because that takes the bitter taste out at the end.
I know some people think this is an unnecessary step, but I think it always tastes better when you do both!
I wouldn’t, it may be too mushy.

Yes, you can do it ahead. But, I’d find a different recipe. Why boil the eggplant first? If it’s sliced thin, breaded and fried you should be fine.
Eggplant parmesan for Thanksgiving? A great idea.

Why are you boiling the eggplant? All you need to do is skip the boiling part, bread and fry the eggplant, layer all ahead of time and put it in the fridge unbaked, on thanksgiving bake it in the oven and make sure you bake it uncovered!
